Actually easier/better (allows you to have persistent storage on USB, 
not so helpful for server install, but then again, maybe it is) I find 
is to use the USB creator in Ubuntu 8.10. System>Administration>Create 
USB Startup Disk.

As far as I know, you cannot make the alternate install disk work using 
unetbootin, it does not look for the files on the usb. Now I can't 
remember if I made a server disk or not with the Ubuntu method... pretty 
sure I did because I have ubuserver running on a cdrom-less system 
behind me :)
