[MLUG] Mail Server help and recomendations.

I have been running a small mail/www/other server for many many years now
(arron.ca).  I want to convert it from Debian to Mint now, since I have
become so used to all the nicenesses in Mint.  It has been over 6 years
since I have setup a small server like this (all hail Debian) and im not
looking for a little input.

I have used squirrelmail over the years and have been quite happy with it.
 For it to run I need imap, maildir amongst the normal pop3 and smtp for
email.  As well this time I would like to use virtual mail users this
time, and no login for them, I could really use some help on this part
too.

Could I get some input on some easy to install (in the repo's), very easy
to setup / maintain and lightweight on resources apps to accomplish this?

As well I will be setting up spamassassin with any good add ons for it,
some input on what addons would be great too.

I know, im looking for a lot of ideas on this, mail servers is defiantly
not my area of specialties.
