I re-did my own server (as well as several VMs) a couple of weeks ago.
(It's practice for several Certs)

Based on several sources, I went with this list of apps:
- -rcs
- -monit
- -postfix
- -apache2
- -dovecot
- -ssh
- -postgrey
- -samba
- -cupsys
- -bash
- -screen
- -spamassassin
- -ntp
- -squirrelmail (not installed yet)

If you want to have virtual users, you will probably have to configure
postfix with sasldb, LDAP, Kerberos or SQL support.

I like to run Monit because it's small, lightweight and it emails any
changes to the monitored daemons.

Another small advice: it doesn't hurt to run a VM and test your settings
in there first. I also like to have RCS or CVS for config files,
especially if more than 1 admin touches the same server.

Ho, and don't twitter your ssh password, like I did by accident... :)

Happy holidays!
